Our Chef
Chef-Partner Ercan Ekinci, is a Certified Executive Chef from the American Culinary Federation. Ercan, originally from Turkey, has trained and worked in both the U.S. and in Europe. He has been honored as “Chef of The Year” for our region by his peers in the ACF. Ercan is glad to help you plan your gourmet activities, be it a simple dinner at home or an elegant event for 500!

Proprietor
Tim Dwight is a former restaurateur from Virginia who moved back to the Melbourne area in 1989. With assistance from his family, he founded the Green Turtle in 2000. He is a CWE level-member of the Society of Wine Educators and a Certificate Level Sommelier from the Court of Master Sommeliers.

Product Manager
Marianne Billings is in charge of ordering all our gourmet grocery items. She is a specialist in tracking down those hard to find goodies that you need to create that special recipe!  Marianne is always available with great menu suggestions–or the ingredients for a special gift basket!

Catering Director
Tammy Nicolette is Catering Director at the Green Turtle. She has been involved in the hospitality industry for over 10 years, and brings a wealth of experience in both food and wine as well as customer service. Contact her to plan your special events and private parties, both in-house at our Grapevine Cafe (for up to 50) or at a location of your choosing.

Wine Manager
Anne-Dominique Haas has obtained the Certificate Level Designation from the Court of Master Sommeliers and is a Certified Wine Specialist from the Society of Wine Educators. She is currently working on the next level, Certified Wine Educator and on Master of Burgundy.  Originally from Switzerland, Dominique is fluent in both English and French and is proficient in German.

Cheese & Produce Manager
Nancy Weatherholdt is our cheese & produce maven. She is very well-traveled & has a strong background in international foods. Nancy is a true “foodie” and has come to the Green Turtle to spread her knowledge of artisanal products to you, our beloved customers! Stop in and ask Nancy to select one of our gourmet cheeses or exotic produce items to enhance your meal tonight!
