Chef Paul has been a staple and a mentor at the Green Turtle Market since 2001. Prior to his time with us, he worked at Captain Coty’s, where he started as Sous Chef and Kitchen Manager and was promoted to Head Chef. He has the proven aptitude to lead a successful fine dining operation. With a passion for food and stellar organization skills, he thrives in high-pressure environments. Paul is always willing to go the extra mile, arriving early and leaving late. He displays a contagious kindness that radiates throughout our establishment.
Chef Hughes is an ACF certified Chef De Cuisine who has owned and managed a local restaurant here in Brevard County which allowed him to add our Florida flare to his culinary repertoire. He graduated from the New England Culinary Institute in Montpelier, Vermont and has worked in many restaurants along the East Coast bringing him a unique culinary perspective which he utilizes in all of his cuisine.
